Late to the party

I had planned to do this post yesterday but somehow the day got away from me.  Linking up with Kate at Daffodils for her virtual cocktail party.

My appetiser is Roasted Sweet Peppers stuffed with Goats Cheese.  A very simple dish, just cut the top off of your peppers, scoop out the seeds, stuff with goats or any soft cheese, replace the top, place in an oven proof dish, drizzle with olive oil, season and bake until soft on 180C

To go along with this, I would drink an Elderflower Vodka Fizz - 1 measure of vodka (you decide how big your measure is), a glug of Elderflower cordial and top up with ice and tonic or soda water.

  4. Sweet peppers and cheese - any cheese - are two of my favourite foods. Mouth is watering already! Just right for a vegetarian guest.
